Greek Tomato Cucumber Salad (Horiatiki) |

This simple salad (and variations) is served in many Greek restaurants in Athens. I never had a meal out where I wasn't happy to have this served with fresh baked bread. The trick is to make it, let it sweat a half hour before serving, then dip your bread pieces in the bottom of the bowl. Major yummy. If you can purchase good-quality feta from an international or Greek grocery, so much the better. Ingredients:
6 -8 roma tomatoes, cut in bite-sized chunks |
1 large cucumber, peeled and cut in small chunks |
3/4 cup crumbled feta cheese |
salt and pepper |
1/3 cup extra virgin olive oil (or more) |
1 round loaf italian bread or 1 french bread, loaf |
fresh herbs of choice |
red wine vinegar |
Directions:
1. Combine all the ingredients is a salad bowl (except bread). Let sit at room temperature for at least 3 minutes. Cut bread into thick slices or let people pull pieces of bread from the loaf. Place communal bowl in the center of the table with forks and the bread. |
