Delicious Vegetarian Casserole Ingredients:
1 sweet potato |
1 eggplant |
1 spanish onion |
1 red pepper |
1 zucchini |
19 oz firm tofu |
8 oz fat free ricotta cheese |
3 tbsp olive oil |
3 tbsp dried thyme |
3 tbsp dried sage |
Directions:
1. Slice all vegetables and tofu into 1/4? pieces. 2. Arrange a layer of yams in the bottom of a casserole dish. 3. Drizzle with olive oil and sprinkle with thyme and sage. 4. Arrange a layer of zucchini next and drizzle with oil and sprinkle with thyme and sage. 5. Arrange a layer of eggplant and drizzle and sprinkle. 6. Arrange a layer of red pepper and drizzle and sprinkle. 7. Arrange a layer of tofu and drizzle and sprinkle. 8. Crumble goat cheese on top of the tofu and drizzle and sprinkle. 9. Repeat the layers with remaining ingredients. |
