Greek Tiropeta- Cheese Pie |

This is one of my favorite recipes to prepare for parties etc.I love the combination of the different cheeses Ingredients:
1 lb feta cheese, crumbled or coarse grated |
1 lb small curd cottage cheese |
1 lb farmers cheese |
8 eggs |
1 lb phyllo dough |
1 lb melted buttered , clarifies |
Directions:
1. Beat all the cheese together until they are fluffy 2. Beat in the eggs one at a time 3. Clarify the butter by melting it and let it sit for a few minutes, 4. Skim off the foamy part and reserve it 5. Butter the bottom of a 10 x 14 baking pan 6. Layer 10 sheets of phyllo buttering each sheet 7. Pout the cheese mixture over the dough 8. Add the reserved foamy butter over that 9. Cover that with 10 more sheets of phyllo, buttering each sheet 10. Tuck in the edges of the dough and butter the top well 11. Bake in a 350F oven for about one hour 12. Cool completely and cut into squares 13. Note: optional, I like to add some garlic or chopped herbs in the cheese mixture such as fresh dill or basil |
