I was craving carbs and a Greek salad one day & that lead to this wonderful creation. Greek dressing is so underated, but in this recipe it is the star! This is a nice, light salad that showcases chick peas, radishes, cucumbers & feta cheese. Ingredients:
2 1/2 cups uncooked farfalle pasta |
1 cup greek dressing |
2 1/2 tbs mayonnaise |
4 radishes, finely chopped |
1/2 cucumber, peeled & chopped |
1 15oz can chick peas, drained |
3/4 cup crumbled feta cheese |
Directions:
1. Bring a medium pot of salted water to a boil. Add farfalle & cook until al dente, then strain & place in medium sized bowl. 2. Stir in the Greek dressing & mayonnaise until farfalle is well coated. Fold in radishes, cucumbers, chick peas & feta. Cover & chill until ready for serving. |
