Greek Style Scampi

From Cooking Light. Serve over rice, pasta, or with toast points for an appetizer.
Ingredients:
1 teaspoon olive oil
5 garlic cloves, minced
2 (28 ounce) cans whole tomatoes, drained and chopped
1/2 cup chopped fresh parsley, divided
1 1/2 lbs peeled deveined large shrimp
1 cup crumbled feta cheese
2 tablespoons fresh lemon juice
1/4 teaspoon fresh ground black pepper
Directions:
1. Preheat oven to 400°F
2. Heat oil in a large dutch oven over medium heat. Add garlic and saute 30 seconds. Add tomatoes and 1/4 cup of the parsley. Reduce heat and simmer 10 minutes. Add shrimp and cook 5 minutes.
3. Pour shrimp mixture into a 9x13 baking dish and sprinkle with cheese. Bake for 10 minutes. Sprinkle with remaining parsley, lemon juice and pepper.
