Greek Style Quinoa Burgers |

Body & Soul - May 2008 Ingredients:
1/2 cup quinoa, rinsed |
1 medium carrot |
6 scallions |
1 (15 ounce) can cannellini beans |
1/4 cup breadcrumbs |
1 egg |
1 teaspoon cumin |
salt & pepper |
2 tablespoons olive oil |
1/2 cup plain yogurt |
1 tablespoon lemon juice |
4 pita breads |
1/2 english cucumber |
Directions:
1. Bring 3/4 cup water to boil; add quinoa, cover, and reduce heat to low. Cook until liquid is absorbed, 12-14 minutes. 2. In processor, pulse carrot, half the scallions, beans, quinoa, crumbs, egg & spices. 3. Form into patties and cook until browned. 4. Combine remaining ingredients and serve on pita. |
