Greek Style Quinoa Burgers

Ingredients:
1/2 cup quinoa, rinsed
1 medium carrot
6 scallions
1 (15 ounce) can cannellini beans
1/4 cup breadcrumbs
1 egg
1 teaspoon cumin
salt & pepper
2 tablespoons olive oil
1/2 cup plain yogurt
1 tablespoon lemon juice
4 pita breads
1/2 english cucumber
Directions:
1. Bring 3/4 cup water to boil; add quinoa, cover, and reduce heat to low. Cook until liquid is absorbed, 12-14 minutes.
2. In processor, pulse carrot, half the scallions, beans, quinoa, crumbs, egg & spices.
3. Form into patties and cook until browned.
4. Combine remaining ingredients and serve on pita.
