Classic Greek flavors.. a friend served this over the holidays with some lamb chops... bugged her till she finally gave me a copy. Typically I prefer a southern style with mustard.. but this was great. Ingredients:
1 lb potatoes, peeled, cut into bit sized pieces |
2 scallions finely chopped |
10 (+) kalamata olives, pitted and halved |
2 tspn capers |
3 - 4 oz. feta cheese, crumbled |
1 tbsp finely chopped fresh dill |
1 tbsp evoo (olive oil) |
1 tbsp lemon juice or juice from 1/2 fresh lemon. |
1/2 tspn sugar |
1/4 cup greek style yogurt |
1/2 tspn sea salt |
1/4 tspn fresh ground pepper |
Directions:
1. Boil potatoes in a large pot of boiling water. Cook until tender. 2. Drain potatoes, allow to cool. 3. In a small bowl, dissolve sugar in the lemon juice. Mix together with the olive oil, yogurt, salt, and pepper until well combined. 4. Place cooked potatoes in large bowl, scatter the scallions, capers, olives, feta cheese, and dill on top and toss gently. to combine. 5. Drizzle the yogurt dressing over the top, mix to evenly coat the potatoes. 6. Serve.... and enjory. |
