You can never have too many potato salad recipes Ingredients:
3lbs small red potatoes, halved and sliced crosswise |
1/2c kalamata olives, slivered |
2 unpeeled garlic cloves |
1tsp oregano |
2t red wine vinegar |
1/2c olive oil |
1/2lb crumbled fetta |
1/2c chopped parsley |
salt and pepper to taste |
Directions:
1. Cook potatoes until tender, combine with olives and fetta in a large bowl. Boil garlic for 5 minutes then peel. Puree garlic with oregano, red wine vinegar and olive oil. Toss potatoes with the dressing , parsley and salt and pepper. |
