I love Lima beans but unfortunately there are few recipes out there that don't involve soup or Veg-all. I found this at Orangette who adapted it from a Gourmet magazine recipe. It's excellent. Be sure to have good bread to dunk in the sauce the beans are in.
Ingredients:
1 (10 oz.) package frozen baby lima beans
1 cup water
2 tbs good-quality olive oil, plus more for serving, if you like
2 tbs coarsely chopped fresh italian parsley
1 tbs minced garlic
1/2 tsp salt
Directions:
1. In a medium heavy saucepan, combine the Lima beans, water, olive oil, parsley, garlic, and salt. Place the pan over medium heat, and cook, covered but stirring occasionally, until the beans are tender, about 15-20 minutes.
2. Transfer to a serving bowl, and serve, drizzled with more olive oil, if you like.
