Greek-Style Chickpeas With Greens and Tomatoes |

I found this recipe at and tweaked it a little. You can use any type of greens such as spinach, kale, chard etc. I used spinach and that is reflected in the recipe. You can also substitute canned diced tomatoes for the fresh ones. Ingredients:
2 medium onions, chopped |
3 garlic cloves, minced |
1 tablespoon coconut oil |
1 (15 ounce) can chickpeas |
3 large tomatoes |
1/4 teaspoon crushed red pepper flakes |
1 teaspoon smoked paprika |
1 teaspoon oregano |
3 tablespoons lemon juice |
1/4 cup dry white wine |
6 cups spinach, chopped |
Directions:
1. Saute the onions and garlic in oil in a large pot. 2. Add the chickpeas and tomatoes. 3. Season with chili flakes, paprika, and oregano and let simmer for about 5 minute. 4. Add the spinach and wine and cook until the spinach is wilted. Then add the lemon juice. 5. Serve over orzo. |
