Well I got this recipe from a friend and made it just like she did and it is a very good salad with so many taste. Ingredients:
1 jar (16-oz.) pickled whole beets, drained |
1/4 cup pitted kalamata olives, halved |
1/2 lb. medium shrimp, cooked, peeled and tails removed |
1/2 cup seeded, chopped cucumber |
1/4 cup crumbled feta cheese |
1 tbsp. snipped fresh dill |
prepared vinaigrette dressing |
Directions:
1. Drain beets well, cut into quarters. 2. Combine beets and olives in medium bowl. 3. Top with combined shrimp and cucumbers. 4. Sprinkle with feta cheese. 5. Refrigerate for 2 hours until chilled. 6. To serve sprinkle with dill, and drizzle with vinaigrette as desired. |
