This is a recipe from a local restraunt called Bright Star ...they are known for this recipe and I finally found it in a old newspaper article...I havent tested it yet but will be trying it very soon. Ingredients:
2 cups olive oil |
4 ounces lemon juice, divided |
2 tablespoons minced garlic cloves, divided |
2 teaspoons dried oregano, divided |
salt and pepper, to taste |
4 (9 -10 ounce) beef tenderloin, filets cleaned, butterflied, and scored |
3/4 cup butter |
Directions:
1. Combine olive oil, 3 ounces lemon juice, 1 1/2 tablespoons garlic, 1 teaspoon oregano, salt and pepper to your taste, and the beef tenderloin in a zipper top bag. 2. Allow meat to marinate 2-3 hours. 3. In a sauce pan, melt butter over medium heat and add remaining 1 ounce of lemon juice, 1/2 tablespoon garlic, and 1 teaspoon oregano, stirring well. Set aside. 4. Remove tenderloin from zipper top bag and discard marinade. 5. Broil tenderloin for 10-15 minutes or until it reaches desired doneness. 6. Top with warm butter sauce. |
