This easy Greek style casserole uses beef,rice, eggplant,cheese & plenty of good healthy herbs/spices Ingredients:
1 lb. lean ground beef |
1 / 2 cup chopped onion |
1/2 cup green pepper |
2 tsp. minced garlic |
1 (8 oz.) can tomatoe sauce |
1 cup beef broth |
1 tsp each; salt, marjoram |
1/2 tsp rosemary |
1/4 tsp.pepper |
1 eggplant diced |
2 cups cooked rice |
4 oz. mozzerella, sliced |
Directions:
1. Cook beef, onion, green pepper and garlic in Dutch oven,stirring often until meat just loses its pink color. Stir in tomatoe sauce, broth,salt, marjoram,rosemary,pepper and eggplant. 2. Simmer 10 min. 3. Stir in rice. 4. Pour into an ungreased deep 2-quart baking dish. 5. Top with cheese 6. Bake 15-20 min. until cheese is melted and lightly brown. 7. Serves 6 |
