This flavorful vegetarian-friendly burger gets a Greek twist with tangy tzatziki, garlic and warm whole-wheat pitas. Delicious - Ingredients:
2 tablespoons pure olive oil |
1 small onion, chopped |
1 garlic clove, minced |
1 (540 ml) can six bean blend, drained and rinsed |
1/2 teaspoon pepper |
1/2 teaspoon salt |
3/4 cup whole wheat breadcrumbs |
1 large egg, beaten |
4 small whole wheat pita bread, grilled |
1/4 cup tzatziki, yogurt & cucumber dip |
sliced tomato |
red onion |
cucumber |
Directions:
1. Heat 1 tablespoons oil in a medium, nonstick skillet over medium heat. Add onion and garlic. Cook, stirring often, until tender, about 5 minutes. Cool slightly. 2. In a food processor, combine onion mixture, beans, salt and pepper. Pulse until mixture is finely chopped and combined but not smooth. Transfer to a bowl. Add breadcrumbs and egg; mix until well combined. Form into 4 equal-size patties. 3. Heat remaining oil in a grill pan or foil-lined grill over medium heat. Grill patties until golden and firm, about 6 minutes per side. Serve patties on grilled whole-wheat pitas and top with tzatziki. Garnish with tomato, onion and cucumber. |
