Great appetizer or main dish. Flavors blend nicely Ingredients:
1 large onion chopped |
1 bunch green onions chopped |
olive oil to saute |
1, 10 oz pkg frozen spinach thawed, drained |
4 large eggs |
1, 12 oz small curd cottage cheese |
1/2 cup crumbled feta cheese |
1/3 cup cornmeal |
1/3 cup self rising flour |
2 tsp sugar |
1 tsp baking powder |

1/2 cup butter melted |
2 more large eggs |
Directions:
1. In a skillet with some olive oil, sauté the onions until wilted and tender. 2. Add the spinach and cover and cook till any liquids absorbed. 3. Remove from heat. In a large bowl mix eggs, cheeses. and combine well with spinach mixture. 4. In another bowl combine flour, cornmeal, baking powder and sugar and blend into spinach mixture. 5. Pour into a greased 9 x 13 baking pan. 6. Whisk the melted butter and 2 eggs and pour evenly over mixture in pan. 7. Bake 350F about 40 - 45 minutes or golden and set. 8. Cool slightly before cutting into pieces. 9. Serve as a side dish or appetizer. |
