This salad is good with chicken too, just sub 1 lb diced cooked chicken for the shrimp. Ingredients:
1 lb. small pasta shells |
1 lb. cooked salad shrimp |
1 c. evoo |
1/4 c. wine vinegar |
1/4 c. lemon juice |
1 t. fresh, minced thyme |
3 garlic cloves, minced |
1 lb. fresh tomatoes, chopped |
1 c. kalamata olives, quartered |
1 large bell pepper, chopped |
1 c. marinated artichoke hearts, drained and chopped |
6 oz feta cheese, crumbled |
6 green onions, chopped |
Directions:
1. Cook pasta according to package. Drain and rinse with cold water. 2. Mix the EVOO, vinegar, lemon juice, thyme, garlic and pepper, set aside. 3. When pasta is cool, place in large bowl add remaining ingredients and toss with dressing. |
