This is a pretty basic Greek salad that is quick and easy to make. I often make it the night before I intend on bringing it to school or work for lunch. Ingredients:
1/2 cup extra virgin olive oil |
1/8 cup red wine vinegar |
1 tablespoon balsamic vinegar |
1 teaspoon oregano |
1 teaspoon garlic salt |
2 cups romaine lettuce, chopped |
1/4 cup greek olive, sliced |
1/4 cup feta cheese, crumbled |
1/2 cup roma tomato, diced |
1/2 medium cucumber, sliced |
Directions:
1. Dressing: Combine olive oil, red wine vinegar, balsamic vinegar, oregano, and garlic salt into a cup or small bowl. Mix with a wire whisk until all ingredients are well-blended. 2. Salad: Chop lettuce, prepare olives as required, dice tomatoes, and slice cucumber as desired. Combine all ingredients, including the feta, into a large bowl or tupperware, preferably with one with a lid that fits tightly. Drizzle dressing over the salad, apply the lid, then shake away. Refrigerate and enjoy within a day or so! |
