Ingredients:
1 cup crumbled feta
1/2 cup heavy cream
1/2 cup grated english cucumber
1/2 cup finely chopped ripe tomato
1 tablespoon grated red onion
1 tablespoon minced kalamata olive
Directions:
1. In a bowl, mash feta and cream together until smooth.
2. Fold in cucumber, tomato, red onion and olives. Cover and refrigerate overnight before serving.
3. Variation: add 1/4 cup champagne or white wine vinegar to this to make a vinaigrette dressing.
