Enjoy this recipe alongside a soup or sandwich; or stuff into a pita half, and drizzle with dressing. Ingredients:
1 large head romaine lettuce, torn |
1/2 cup chopped fresh parsley |
3 green onions, chopped |
2 tomatoes, cubed |
1 cucumber, sliced |
1 tablespoon chopped fresh or 1 teaspoon dried mint leaves |
1/2 cup crumbled reduced-fat feta cheese |
1/4 cup kalamata olives, pitted and chopped |
greek salad dressing |
3 (6-inch) pita rounds, halved and warmed (optional) |
Directions:
1. Combine first 6 ingredients on a large platter or in a large bowl. Top with cheese and olives. Serve with Greek Salad Dressing and, if desired, pita halves. 2. Note: Calories include 2 tablespoons dressing. |
