No matter what your Ethnic background, this Greek Salad is just as pretty to look at, as it is satisfying to your palatte!! Simple to make, yet packed with flavor!! Ingredients:
1 medium head romaine lettuce, torn |
1 head curly endive, chopped |
1 cup cherry tomatoes |
3/4 cup crumbled feta cheese |
1/4 cup sliced pitted ripe olives |
1/4 cup sliced red onions |
1/4 cup green pepper finely chopped |
1- 2oz can anchovy fillets, drained (optional) |
2/3 cup extra virgin olive oil |
1/3 cup vinegar |
1/4 teaspoon dried oregano |
salt and pepper |
Directions:
1. Toss the greens together and arrange on a salad platter. Add tomatoes, feta cheese, olives, onions, peppers and anchovies. 2. Dressing: 3. In medium bowl whisk together the vinegar, oil, oregano, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Pour over salad. |
