I hate this part more and more everyday Ingredients:
3 chicken tenders |
2 tbs olive oil |
2 tbs lemon juice |
1 tbs greek seasoning |
1 cup of your favorite lettuce |
1/2 tomato quartered |
sliced red onion |
1/4 of a cucumber peeled and sliced |
1/4 cup of feta cheesed crumbled |
6 kalamata olives chopped |
1 slice of cooked eggplant cut into strips |
Directions:
1. Combine the olive oil,lemon juice, chicken tenders and Greek seasoning in a plastic bag and mix thouroughly. Allow to sit overnight. 2. Combine all other salad ingredients and 1 TBS of Greek dressing and toss with hands several times. Set aside. 3. Heat a non-stick pan on a med heat for 3 minutes. Add the chicken tenders and saute for around 3 minutes. Turn them over and saute another 3 minutes or until done depending on thickness. Add this to the salad. 4. For a quick Greek dressing just add 1 tsp of the Greek seasoning to 1TBS olive oil, 1/4 tsp dijon mustard and 1/4 tsp honey and mix together. s&p to taste |
