Great Summer Salad or alternative to greens salad. Ingredients:
6 cucumbers |
6 tomatoes |
1 large onion |
4 oz feta cheese |
18 kalamata olives |
3 tbsp olive oil |
1 tsp oregano |
1 tsp ground red pepper |
Directions:
1. Peel ribbons off of washed cucumbers. Chop cucumbers into 1/4 inch chunks. Halve and slice the tomatoes to 1/4 inch thickness. Chop the onion into 1/4 inch chunks. Slice olives in half. Mix all chopped vegetables in a resealable tupperware. Mix in olive oil, and spices. For best flavor, refrigerate for 1 to 2 hours. Spinkle feta on top prior to serving. |
