This greek salad is a family favourite and great for people who are trying to eat well in a hurry as it can be prepared ahead of time. Make this recipe with pre-marinated, individually packaged, pork or chicken souvlaki skewers for about 130 calories each for a delicious 300 calorie greek dinner in less than 10 minutes! Ingredients:
2 cucumbers, long english |
2 tomatoes, hot house |
2 green peppers |
1 white onion |
1/4 cup extra virgin olive oil |
1/4 cup balsamic vinegar |
250 g feta cheese |
Directions:
1. Slice all of the veggies into cubes. 2. Toss with salt, pepper, maybe a little oregano and a pinch of sugar if the tomatoes are tart. 3. Add vinegar and THEN olive oil, toss once more. 4. Crumble and add the feta cheese. Can be served right away, or be kept in the fridge for up to 4/5 days. 5. I think it tastes even better on day 2 and 3 once the vinegar and seasoning had a chance to really penetrate the veggies. |
