The Vegetarian Kitchen Table Cookbook Ingredients:
2 large tomatoes |
1 cucumber, peeled |
8 ounces feta, cubed |
32 kalamata olives |
salt and black pepper |
1/2 cup olive oil |
fresh oregano |
Directions:
1. Remove cores from tomatoes and cut in 8 wedges. Dice cucumbers into 3/4 inch cubes. 2. In a bowl, combine tomatoes, cucumbers, feta and olives. Add salt and pepper to taste and olive oil. 3. Arrange salad on serving plates and sprinkle with oregano. |
