Sometimes you just get a real craving for a DELICIOUS Greek salad. This one satisfies our palate every time. I serve it with Greek Chicken Breast Souvlaki & Greek Lemon Roasted Potatoes, pita bread/dip, and a glass of wine for a nice Greek dinner. I hope you Enjoy! Ingredients:
3 tomatoes |
1 cucumber |
1 red onion |
1 cup green pepper |
1 cup red pepper |
1/2 cup olive |
4 ounces feta cheese |
2/3 cup olive oil |
2 tablespoons red wine vinegar |
1 tablespoon lemon juice |
1 garlic clove |
2 teaspoons dried oregano |
1/2 teaspoon salt |

Directions:
1. Dice up the vegetables- I usually use a small red onion as I don't like it to overpower the salad. You can adjust the vegetables to your tastes. 2. Place the vegetables in a bowl along with the olives and feta cheese. 3. Mix olive oil, red wine vinegar, lemon juice, garlic, oregano, salt and pepper and pour over the vegetables. 4. Usually I let everything sit and marinate in the fridge for approximately 1/2 an hour. This seems to marry the flavours! I like to serve it in a clear serving bowl as the colours are so fresh and appealing. |
