What an impressive and tasty salad. This comes from my friend Adrianna who served this at her international theme dinner party last month and it was loved by everyone. Since last month I have made it twice and I can't get enough of it. Read more . Enjoy Ingredients:
3 cups cooked rice |
12 ounce jar marinated artichoke hearts drained and coarsely chopped (reserve liquid) |
1 large tomato seeded and chopped |
1 cucumber seeded and chopped |
1 red onion chopped |
1 cup feta cheese crumbled |
2 ounce can sliced black olives drained |
1/4 cup fresh parsley chopped |
1 tablespoon fresh lemon juice |
1/2 teaspoon dried oregano |
1/2 teaspoon lemon pepper |
lettuce leaves |
Directions:
1. Combine rice, artichoke hearts, tomato, cucumber, onion, cheese, olives and parsley. 2. Stir in lemon juice, oregano and lemon pepper then refrigerate 1 hour. 3. Just before serving drizzle reserved artichoke marinade over salad. 4. Toss to blend then spoon onto individual lettuce lined salad plates. |
