This pilaf can be the centerpiece of your meal, or can be a side dish. It comes from a Moosewood cookbook. Ingredients:
1 large onion, chopped (about 1 1/2 cups) |
2 tablespoons olive oil |
1 -2 garlic clove, minced |
1 tablespoon dried mint |
1/8 teaspoon ground black pepper |
4 cups fresh spinach, chopped |
3 tablespoons fresh lemon juice |
4 cups cooked rice |
1 cup green peas, fresh or frozen |
2 tablespoons fresh dill, chopped |
1 cup feta cheese, crumbled |
Directions:
1. In a heavy skillet, saute the onions in oil on medium heat until they begin to soften. 2. Add the garlic, mint and pepper and saute for 2 more minutes. 3. Stir in the spinach, lemon juice, rice and green peas. 4. Add the dill. 5. Cover and cook for 3-4 minutes, stirring occasionally. 6. When the spinach is limp and the rice is hot, top with the feta and serve immediately. |
