Feta, Greek olives and herbs- a classic. This is a great side dish for your Greek dinner. It is not overpowering just a great medley of flavors. Try it with souvlaki..you won't be disappointed. Ingredients:
2 cups chicken stock |
1/2 teaspoon salt |
2 garlic cloves, minced |
2 teaspoons olive oil |
1 cup white rice |
3 green onions |
1 cup tomato |
1/4 cup black olives |
3 ounces feta |
1/2 teaspoon oregano |
1/2 teaspoon rosemary |
1/4 teaspoon thyme |
Directions:
1. In a medium saucepan, bring the chicken stock, salt, garlic and oil to a boil. Add long-grain white rice; return to a boil. 2. Reduce heat, cover and simmer until rice is tender and liquid is absorbed, about 20 minutes. Remove from heat. 3. Stir in remaining ingredients. Serve hot. |
