This may not be truly Greek in its style, but it's what I like to call Greek and I can't stay away from it! Ingredients:
1 c quick-cooking brown rice |
1 cup water |
1 clove garlic (grated) |
zest of 1 lemon |
3/4 c artichoke hearts |
1/2 c chopped fresh spinach |
2 tbsp chives (chopped) |
juice of 1/2 lemon |
dried oregano |
salt, to taste |
1/3 c crumbled feta cheese |
1/4 c kalamata olives (stoned and chopped) |
Directions:
1. Bring water to a boil, add rice, garlic, and artichokes, cook covered for 5 minutes. 2. Add rest of ingredients, let sit, covered, for 5-7 minutes, to heat everything through. 3. Notes: make sure not to leave the top off the pot for too long while adding ingredients. The mixture needs its steam to cook the rice. |
