2 pounds new potatoes |
1/4 cup olive oil |
1/4 cup red wine vinegar |
3 tablespoons mayonnaise |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/2 teaspoon dried oregano |
Directions:
1. Cook potatoes in boiling salted water to cover 30 minutes. Cool slightly. Cut into 1-inch pieces. 2. Whisk together oil and next 5 ingredients; toss with potato. |
