Had this salad at a party at work,made by co-worker. I have made several times. I use kalamata olives and add some feta cheese. Sometimes I add chopped cucumber too. Ingredients:
3 lbs. red bliss potatoes,cut in small pieces or sliced |
1 lg. red onion,sliced thin |
1 small can black olives,sliced |
2 tb red wine vinegar |
1/4-1/2 c mayonnaise |
3 tb olive oil |
salt and pepper to taste |
Directions:
1. Boil potatoes till tender...let cool. Mix potatoes with mayo,vinegar,oil,salt,peer,onions and olives. Toss till lightly coated. If you prefer salad more moist,add more mayo,vinegar and oil. 2. As I mentioned,I add crumbled feta and sometimes chopped cucumber. |
