This potato salad recipe comes from a friend who is Greek. Delicious. Ingredients:
3 lbs. red bliss potatoes,cut in small pieces or slices |
1 lg. red onion,sliced thin |
1small can sliced black olives |
2 tbs red wine vinegar |
1/4 to 1/2c mayonnaise |
3tbs olive oil |
salt and pepper to taste |
Directions:
1. Boil potatoes till tender.....let cool. Mix potatoes with mayo,vinegar,oil,salt,pepper , onion and olives. Toss till lightly coated. If you prefer salad moister,you can add more mayo,vinegar and oil. |
