GREEK POTATO BAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Benson Estate in Canton, Texas in 1987. Ingredients:
6 medium potatoes peeled and quartered |
1 small bunch fresh thyme |
2 garlic cloves crushed |
4 small ripe tomatoes |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
1/4 cup olive oil |
1/4 cup white wine |
Directions:
1. Preheat oven to 350 then place potatoes, thyme, garlic and tomatoes in a roasting pan. 2. Season with salt and pepper the mix olive oil and wine and pour over potatoes. 3. Cover roasting pan with aluminum foil and seal the edges. 4. Bake 30 minutes then serve while warm. |
