Great with a steak, or for lunch with the girls! Marinate mushrooms for 1 hour before grilling. Ingredients:
1 cup greek vinaigrette dressing, divided |
1 lb. portobello mushrooms |
1 8-oz. package feta cheese, crumbled |
1 10-oz. package fresh spinach, torn |
3 plum tomatoes, sliced |
1/3 cup thinly sliced red onion |
1/4 c kalamatta olives, drained, sliced |
1/4 c pepperoncini peppers, drained |
Directions:
1. In a shallow dish, pour 2/3 cup salad dressing over mushrooms, cover and refrigerate for one hour to marinate. 2. Drain and discard dressing. 3. Grill or broil mushrooms until cooked through, about eight to 10 minutes. 4. Cut into slices. 5. Toss mushrooms with remaining ingredients. |
