Greek Pork With Feta And Greek Yogurt |

These are SO good, and so easy! If you can't find good pita bread, you can use lavash. And some fresh spinach is also a great addition. Ingredients:
1 1/2 lbs boneless pork |
1 tsp dried oregano |
2 tsp thyme |
4 pita breads |
4 tb greek yogurt |
4 oz feta |
1 lemon, quartered |
marinade |
2 crushed garlic cloves |
2 tb olive oil |
1/2 tsp oregano |
1 tb lemon juice |
sea salt and pepper |
Directions:
1. Slice the pork finely but roughly at different angles. 2. Mix all the ingredients for the marinade, add the pork, turn to coat, and let marinade until ready to cook. 3. Heat a nonstick fry pan and sear the pork over hight heat, tossing it in the pan until crisped on the edges, but still a little pink inside. 4. Add the oregano and thyme, and toss well. 5. Heat the bread in a warm oven or dry frying pan for 3 minutes. 6. Place a pita on each plate. 7. Add a spoonful of yogurt, pile the pork on top, and scatter the feta over. 8. Serve with lemon quarters for squeezing over. |
