This easy-to-make dish throws together in seconds. Feta makes a zesty, salty garnish to this flavorful stew. Ingredients:
2 (14.5 oz) cans diced tomatoes with basil, garlic and oregano (or equivalent with canned regular tomatoes) |
1 can cannellini or other white beans, rinsed and drained |
1 10 oz bag spinach, chopped |
4 cups hot cooked penne (or other chunky) pasta |
1/2 cup (2 oz) finely crumbled feta cheese |
Directions:
1. Combine tomatoes and beans in a large, nonstick skillet over medium-high heat. Bring to a boil. Reduce heat and simmer 10 minutes. Add spinach and cook 5 minutes or until wilted, stirring occasionally. Serve over chunky pasta with crumbled feta cheese. |
