Greek Pasta Salad With Chicken |

This meal comes together quickly and is great for summer! Not too heavy, but very satisfying! I grill the chicken, but it can be prepared any way you like. Ingredients:
1 lb cavatappi pasta |
1 cucumber, sliced |
1/3 cup feta cheese, crumbled |
1/3 cup kalamata olive, pitted and halved |
2/3 cup greek salad dressing (i prefer ken's steakhouse) |
1/3 cup mayonnaise |
1 -1 1/2 lb chicken, grilled and cubed |
Directions:
1. Season Chicken to taste and grill until internal temp is 165 degrees. Cook pasta to al dente, drain and rinse with cool water. Set aside. Whisk together greek dressing and mayo. Stir in pasta, feta, cucumbers and olives. Top with cooled chicken and serve! Easy! |
