10 ounces tri-color fusilli |
1/2 cup extra virgin olive oil |
1/4 cup red wine vinegar |
1 tablespoon balsamic vinegar |
1 tablespoon lemon juice |
1 1/2 teaspoons garlic powder |
1 1/2 teaspoons basil, dried |
1 1/2 teaspoons oregano, dried |
1 large cucumber, diced |
1 yellow bell pepper , diced |
15 cherry tomatoes, halved |
3/4 cup feta cheese, crumbled |
1/2 cup red onions, finely chopped |
Directions:
1. In a large pot, bring lightly salted water to a boil, add rotini pasta. Cook pasta until al dente, about 8- 10 minutes; drain. Retun to pot and mix in olive oil, vinegars, lemon juice, garlic powder, basil, oregano, cucumber, pepper, tomatoes, Feta cheese, onions and olives. cover and chill for at least 2 hours, serve cold |
