Pasta salad made best with orzo style pasta. Serve room temperature. Great for barbeques and picnics because there is no mayo to spoil. Ingredients:
1 pound pasta |
8 oz chopped olives |
1 red pepper |
1/2 red onion |
8 oz feta cheese |
1 cup balsamic vinegar |
2 tablespoons extra virgin olive oil |
Directions:
1. Cook pasta, drain. 2. Chop olives, red pepper and red onion. Combine with pasta. 3. Add balsamic vinegar and olive oil. Mix well. 4. Crumble feta cheese and toss. 5. Serve room temperature or cold. |
