Another great block-party recipe Ingredients:
1 lb orzo pasta |
1 cucumber, peeled seeded and diced |
1/2 cup black olives, sliced |
2 tomatoes, seeded and diced |
1 cup crumbled feta cheese |
1/4 cup fresh mint, finely chopped |
3 tablespoons lemon juice |
1 teaspoon lemon, zest of, finely grated |
2 shallots, finely chopped |
1 clove garlic, finely chopped |
1/2 cup olive oil |
Directions:
1. Cook the orzo as directed. 2. Drain pasta under cold water and transfer to a large bowl. 3. Add remaining ingredients, and toss with vinagrette, and season to taste with salt and pepper. 4. Let stand at room temperature for 2 hours. |
