Yummy casserole. Adapted from Light and Tasty. Ingredients:
1 (12 ounce) package whole wheat penne |
4 cups cubed cooked chicken breasts |
1 (29 ounce) can tomato sauce |
1 (14 1/2 ounce) can diced tomatoes, drained |
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry |
2 (2 1/4 ounce) cans sliced ripe olives, drained |
1/4 cup chopped red onion |
2 tablespoons chopped green peppers |
1 teaspoon dried basil |
1 teaspoon dried oregano |
1/2 cup shredded part-skim mozzarella cheese |
1/2 cup crumbled feta cheese |
Directions:
1. Cook pasta according to package directions and drain. 2. In a bowl, combine pasta, chicken, tomato sauce, tomatoes, spinach, olives, onion, green pepper, basil and oregano. 3. Transfer to a 13-in. x 9-in. x 2-in. baking dish coated with cooking spray. 4. Sprinkle with cheeses. 5. Bake, uncovered, at 400° for 25-30 minutes or until heated through and cheese is melted. |
