Greek Oven Roasted Potatoes |

Recipe from a Greek chef . It's very good! Ingredients:
5 lb potatoes;peeled and cut into -1/2 wegdes like thick fries |
salt and pepper to taste |
2/3 c olive or vegetable oil |
juice of 1 lemon |
2 c chicken or lamb broth |
1 ts paprika |
2 ts oregano |
2 ts garlic powder |
Directions:
1. Place the potato wedges in a deep roasting pan. 2. Pour in the broth, oil and lemon juice. 3. Sprinkle in the remaining ingredients and mix to equally distribute 4. liquids and spices. 5. Bake at 400 uncovered for 1 1/2 hrs. or until the potatoes are tender. 6. After 40 minutes, remove pan and shake potatoes. 7. Then return to oven and leave undisturbed for the remainder of the 8. baking time. |
