Serve with Greek salad and crusty loaf of bread. Ingredients:
1 lb skinless chicken breast |
1 1/3 cups carrots, coarsely grated |
1 1/3 cups zucchini, coarsely grated |
1/2 cup heavy cream or 1/2 cup half-and-half |
2 tablespoons olive oil |
3 tablespoons ouzo |
sea salt |
fresh ground pepper |
Directions:
1. Heat the oil in a heavy-bottomed frying pan. When hot, add the chicken and sauté for 4 minutes. Add the carrots and zucchini and continue to sauté 3 minutes longer. Add the ouzo, cream, salt, and pepper and cook 2-3 minutes more until the sauce melds. |
