Greek Meatball Sandwiches |

It's all Greek to me! Ingredients:
3 tablespoons vegetable oil, divided |
1 onion, minced |
2 garlic cloves, minced |
1 1/2 lbs ground lamb or 1 1/2 lbs ground beef or 1 1/2 lbs ground turkey |
1 slice sandwich bread, torn into crumbs |
5 tablespoons chopped fresh mint or 5 tablespoons cilantro |
2 teaspoons ground cumin |
1 1/2 teaspoons salt |
1/4 teaspoon fresh ground black pepper |
1 large egg, lightly beaten |
4 large pita bread |
tomato, slices |
shredded lettuce |
8 ounces plain greek yogurt (do not use fat-free or reduced-fat versions) |
1/2 cup cucumber, peeled seeded and minced |
2 tablespoons fresh lemon juice |
2 garlic cloves, minced |
1/4 teaspoon salt |
Directions:
1. Heat 1 teaspoon oil in a large skillet over medium heat. Cook onion and garlic until translucent, about 5 minutes. Allow to cool. 2. In a large bowl, mix lamb (beef or turkey), breadcrumbs, mint or cilantro, cumin, salt, pepper and egg. Mix in cooked onions and garlic. Shape mixture into 16 meatballs (about 2 inches in diameter). 3. Add the remaining 2 tablespoons plus 2 teaspoons oil to the skillet; place over medium-high heat. When oil is hot, add meatballs. Cook, turning, until browned all over and cooked through, about 3 minutes. Drain on paper towels. 4. Cut tops off pitas and open, forming pockets. Fill each with four meatballs, sliced cucumber and tzatziki to taste. 5. To make Tzatziki: Combine all ingredients in a large bowl. Stir to blend. Chill until ready to serve. |
