1 cup chopped onion |
1 cup chopped green bell pepper |
2 teaspoons minced garlic |
2 cups peeled and diced potatoes |
1 cup lentils, washed and sorted |
1 (14 ounce) can diced tomatoes |
3 cups vegetable stock |
1 teaspoon dried oregano |
1 teaspoon dried mint |
1/2 teaspoon ground turmeric |
1/2 teaspoon ground coriander |
1 medium zucchini, sliced |
1/2 lb green beans, trimmed |
salt and pepper |
Directions:
1. Spray a large saucepan with cooking spray; heat over medium heat until hot. 2. Sauté onion, bell pepper and garlic until tender, about 5 minutes. 3. Add potatoes, lentils, tomatoes, stock and seasonings; heat to boiling. Reduce heat and simmer, covered, until lentils are tender, about 25 minutes. 4. Add zucchini and green beans; simmer, uncovered, until vegetables are tender and stew is thickened, about 10 minutes. Season to taste with salt and pepper. |
