Greek Lemon And Rice Soup |

A very lemony easy soup. Great as an appetizer. Cooking Class Beans & Rice. Ingredients:
1 to 2 fresh lemons |
2 tbs. butter |
1/3 cup minced green onions with tops |
6 cups chicken broth |
2/3 cup uncooked long grain white rice |
4 eggs |
1/8 tsp. white pepper (optional) |
Directions:
1. Juice lemons. 2. Melt butter in 3-quart saucepan ove medium-heat. 3. Add green onions. Cook and stir about 3 minutes or until green onions are tender. 4. Stir in chicken broth and rice. Bring to a boil over medium-high heat. 5. Reduce to low; simmer, covered, 20 to 25 minutes until rice is tender. 6. Beat eggs in medium bowl with wire whisk until well beaten. 7. Add lemon juice and 1/2 cup broth mixture to bowl. 8. Gradually return lemon juice mixture to broth mixture in saucepan, stirring constantly. 9. Cook and stir over low heat 2 to 3 minutes until broth mixture thickens enough to lightly coat spoon. Do not boil. 10. Stir in pepper, if desired. 11. Garnish with fresh mint and lemon peel, if desired. |
