We love this recipe and cook it regularly, adapted from a recipe from the BBC Good Food magazine. Ingredients:
1 kg lamb shoulder, diced |
2 onions, sliced |
1 teaspoon dried oregano |
1/2 teaspoon ground cinnamon |
2 cinnamon sticks, broken in half |
2 tablespoons olive oil |
400 g chopped tomatoes |
500 ml hot chicken or 500 ml vegetable stock |
400 g orzo pasta |
freshly grated parmesan cheese, to serve |
Directions:
1. Brown the lamb in a non-stick frying pan then transfer to a slow cooker. 2. Heat the oil in the same pan and gently fry the onions until soft, add the oregano and cinnamon, stir then add to the slow cooker on a low temperature. 3. Add the cinnamon sticks, tomatoes and the stock to the slow cooker. 4. Cook for approximately 7 hours until the meat is tender. 5. Turn the heat to high, remove the cinnamon sticks and add the orzo. 6. Cook for approx 25 minutes until the orzo is cooked. 7. Sprinkle with parmesan and serve with crusty bread. |
