I made this a few months ago to try it out and it is delicious .it uses a few quick fixes such as rice a roni and the deli roast beef but it tastes wonderful.............courtesy of best loved quick meals from mixes. Read more ....... Ingredients:
1- package of beef- flavor - rice a roni |
2- tablespoons butter |
8- ounces thick deli sliced roast beef cut into 1/2 inch pieces |
1/2- cup chopped red onion |
1/2- cup sliced black olives |
3- plum tomatoes, seeded and chopped |
1/3- cup olive oil |
1/4- cup lemon juice |
2- cloves garlic , crushed |
1/2- teaspoon dried oregano |
1/2- teaspoon ground black pepper |
1- medium cucmber, thinly sliced |
1/2- cup crumbled feta cheese |
Directions:
1. In a large skillet over medium heat , saute th e rice a roni with butter until the vermicelli in the rice a roni is golden brown 2. slowly stir in 2 1/2- cups water and specail seasonings and bring to a boil 3. reduce heat to low simmer 15 to 20 minutes- or until the rice is tender.cool completely 4. in a large bowl , combine olive oil, lemon juice, garlic, oregano, and pepper, with a wire whisk..... 5. toss rice mixture with dressing .......... 6. chill at least 30 minutes ..... 7. garnish with cucmber slices and feta cheese |
