Greek Inspired Baked Chicken |

Very Simple - Just assemble the ingredients and bake in the oven. Omit the salt if you brine your chicken. Ingredients:
6 chicken thighs (bone in, skin on) |
1 lemon (juice and zest) |
4 tablespoons olive oil |
3 garlic cloves, crushed |
1/4 cup white wine |
1 teaspoon pepper |
1 teaspoon salt |
1 teaspoon dried oregano |
1/2 teaspoon basil |
1/2 teaspoon thyme |
1/4 teaspoon marjoram |
1/4 teaspoon mint |
1/4 teaspoon cinnamon |
Directions:
1. Preheat oven to 375 F. 2. Place chicken skin side down in a baking dish. 3. Combine all other ingredients an pour over chicken. 4. Bake for 45 minutes. 5. Turn chicken and bake for a further 15 minutes. 6. Pour the liquid into a saucepan and return the chicken to the oven to broil for 5 or 10 minutes to crisp up the skin. 7. Reduce the liquid to half at medium heat and use as a sauce for the chicken and cooked rice. 8. Voila! |
