Greek Grilled Cheese Sandwich |

Yum! I love Greek pita bread, feta and spinach so this sandwich hits the spot. Who doesn't like a grilled cheese sandwich? This recipe is from a Canadian cheese magazine. Enjoy! Ingredients:
4 thick greek pita breads |
1 cup feta, sliced or crumbled |
2 tablespoons black or green olive tapenade |
1/2 tomato, seeded and diced |
1/2 cup spinach, fresh, chopped |
1 teaspoon dried oregano |
salt and pepper |
Directions:
1. Evenly distribute all ingredients on two pitas, top with remaining two. 2. Heat skillet over medium-low heat. 3. Cook sandwiches approximately 5 minutes on each side or until pitas are crispy and feta is starting to melt. 4. Cut each sandwich in half. |
